at what point do slamanders / axotls lose those things on their head and start to walk on land

Axolotols live their entire life in the larval state, so they never do. as for other sallys, it depends on species and how they are kept.

don't axolotols morph if they're not kept in the right conditions? ie if the water isn't quite right.
