Yes they can eat them, baby ones are best, bite size . I would personally try to make sure they are free from nasties before hand but this can be very hard. I stopped using them years ago as I was worried for the hogs safety but I know people who have let their hog eat garden snails, which I most def would not. I worry too much though so over all I would say yes, but do you know what they love, captive bred earth worms. If going for fisheries stock make sure there is no dye but they just love these.

To be honest I would get them from someone who knows their snails and has generations of healthy snails, only then would I say yes they should be safe enough for the hedgies. They are very easy to keep & breed. As they are hermaphrodite you only need two but I would get a trio. Try the worms too. I also feed locust to adult hedgies and hoppers to young ones.
