Yeh, nitrate removing sponges or filters will help. I would still recommend doing a week of about 25% daily water changes, and then from then onwards doing 50% weekly ones, and seeing what the level sticks at.

the substrate should provide the buffering as its coral, however thinking on is this part of the problem, a deep bed harbouring the uneaten food ?? and from that producing nitrate

if it wont come down no matter what then you need to look at your system and why, you could add for instance a denitate filter or denitrate tube, either will work, however they take time to mature
