as for nitrate im pretty sure i read that live p;ants need a bit of that and i have 4 of them. is that correct?

But dont try to keep any in there on purpose... try to get that as low as possible as well, you'll probs never get it to 0. That can safely be a lot higher than 5ppm though... 5 is good! So no worries there.

You do nothing... keep seeding the water with food or something to keep the ammonia-using bacteria alive, but otherwise just leave it. Nitrifying bacteria will convert the nitrite to nitrate in a bit... and the nitrite will fall to 0. You really do need a reading of 0 before adding any fish.
