Because a warm damp box is the ideal place for mould to grow. Condensation is the evaporated water, meeting the impenetrable glass.

you need to increase the ventilation. Increased ventilation will also decrease temp an humidity so keep an eye on them. stagnant water leads to mould, leave the tank to dry in between misting if it is safe for your dragon.
If the condensation has only recently started it may be because you mist more often inside the tank but it can also be because outside ambient temp has dropped.

if you keep a humid tank disinfect it regularly with a reptile safe disinfectant, avoid bleach imo , bleach doesn't kill fungal spores anyway.
