Heat mat setup for newbies?

Today me and my girlfriend took one step closer to getting our first ever reptile, a leopard gecko. We got all our accessories! However, the setup of the heat mat is confusing me.

I will be using a kitchen roll substrate. Do I put the thermostat temperature touching the mat, under the kitchen roll? Do I put it above the kitchen roll, but still on the mat? Or do I put it away from the mat altogether, but still on the hot side?

Also, I am going to get reptile carpet eventually, when it's grown up. The same questions for that really. Thanks!

Put it on top of the kitchen roll on top of the heatmat
