Default Ratty ID please? :)

I'm completely new to rat types, so I apologise if these two are obvious!

Congrats, they are very pretty

If they're from the pet shop, skittish is normal, as pet shop rats usually come from rodent farms like this one:
Fancy Rats • View topic - Visit to a rodent farm (with pics!)

...so they have little handling at all.

And you think Simon's rodents is any better? Crikey! From what I hear, most definitely not.

Edited to add - just because those pics are taken in the Netherlands doesn't make the rodent farms in the Uk any better. I have heard from people who visit them and they are just as bad as these, if not worse.

Which is why I wont ever buy pet shop animals again. Those "small breeders" the pet shop tell you about - they're rodent farms too.

The roan doesn't look black on my monitor, possibly blue? Can't tell which blue though.

I won't even start on Simon's Rodents, they're foul, I've had the fallout here.
