Oh they're lovely!
I think people get too hung up about food amounts and weight gain... monitor your torts weight over a period of time and aim for a steady weight gain over the months. I know from experience that some months mine will eat less and put on less but equally they'll have 'hungrier' periods when they eat more and put on more. If they start to put on huge amounts of weight every month then reduce their food a little. Always try and make sure you weigh them at the same time as well... always before or after the bath because having a poo, wee, passing urates, whether they're full of food or not can make quite a difference in their weight.
You'll get a feel for it and know when you need to reduce or increase. You'll probably find that one will have a different phase to the other as well... one will be greedier than the other for instance. When that happens it's sometimes a good idea to feed them separately so that the greedier one doesn't get all the food!
