The leaves and flowers of pansies are both okay... they'll soon disappear though if you plant them straight in your tort table! Plus if he just gorges on those and leaves anything else you put in there then he won't get as much variety as he should. Why not put them in your tort table in plant pots that he can't reach if you just want to 'pretty it up' a bit.
My tort loves the flowers but isn't so interested in the leaves but I only feed them to her once a week for variety.

i have three sub adult leopard tortoises in my greenhouse and they have loads of pansies and primroses and violas planted in there. Aslong as i feed the every day then they will have the odd munch on a leaf or a flower but they will last for a month or two at least. they are happy to graze on a huge mix of plants and weeds so the more variety the better. And most torts wont gorge on one food stuff if there is a selection for them to taste. there is always an exception to the rule though!

I have pansies plated in thge soil of my hermanns table he occsionally has a nibble but hasnt managed to kill any of them yet and they have been in there a good 2 months now. he has even allowed a couple to flower without eating

Pio hasn't eaten any yet. He just sits under the pansy all day. For some reason he never goes on the warm side of his viv. any more. The pansy is on the cool side. It is his new hang out since I put it in there.
