we currently have our two horsfields in a viv, outside enclosure is almost ready.
To control the humidity we bought a digital hygrometer, about £15 from a petshop, it records the min and max levels, we put the probe in the centre of the viv about half way up
Has your viv got an open or mesh top?
We leave both doors open slightly to allow adequate airflow, obviously not open far enough for the torts to escape.

you dont even need that my gfs tortoise a hermanns lives in the viv with our beardied dragons and uromastyx in a desert eviroment, the only humidity in there virtually none is form the water dish, the sliding glass door has enough gap to allow a little/fair amount of air circulation for all that are in there baring in mind it is a very big viv! made out of an old wardrobe, by her dad. she had the tortoise along time now several years all good and well and the tortoise stays in there all year round doesnt get hibernated.

has she ever had any concerns or problems with mixing species with different requirements? the hotspot and back ground ambient temp for a beardy and a hermanns are really pretty different. Has the hermanns or beardy ever been tested for parasites by a vet? would be interesting to know if there is any cross over.
