Turtle Species
This has probably been asked a hundred times so apologies for the 101st occasion...
 Basically, my local shops only seem to stock YB and RE sliders which I believe can grow quite large. Are there any other species that people would recommend that stay below 12" but are reasonably easy to find? I won't have room for much bigger than a three foot tank (250-300L) once a juvenile outgrows the 60L tank.

Look at Common Musks, they are about the only species that you could comfortably keep in a tank of that size when adult whether male or female, other musks might be a possibility such as Razorbacks or Loggerheads, but they are harder to find and do grow a bit bigger.
The other alternative would be to get a Map turtle which was old enough to sex and make sure it's a male, they rarely exceed 5" and a single one would be OK in that size tank. But you'd have to be certain it was male because females can get to twice that size and would need a much larger tank.
