Default irregular eating patterns in a hermans?

hey all most of u will prob remember when i first got my herbie he wouldnt eat anything for like the first three weeks?! now he eats a good variety of weeds thats put down in front of him. I know to only feed enough to cover his shell but he would prob eat that amount in the space of five minutes and then sometimes he will skip a day and not eat anything at all?
Am i worrying unneccessarily?
