10 gallon for one and 20-30 gallon for 2-5 approx.
I'd go for UK gallons as they're bigger than US ones e.g. 10 UK gallons are 12 US gallons.

Emps are burrowers so you need height to get a few inches of substrate in. Emps are also good climbers so be careful of how much height they have and what they can climb, you don't want your Emp falling from great heights.

I use a 45x45x45cm exo terra glass tank for mine without the background.

Yep that's a good size. Are you going to go with a plain layout or something fancy? If you click the link in my signature and scroll to the bottom you can see how I do my tanks.

Ok well coco fibre for substrate works well, make sure you get enough for a good few inches. Expands best with warm/hot water.
Heatmat and mat-stat. In this weather a stat is needed really, my mat seems to be off more than on at the moment.
Thermometer and hygrometer
Water bowl not too deep.
They don't like light so I wouldn't bother with one.
Sphagnum moss will aid with humidity and can be bought in big bags at this time of year from garden centres / garden section at DIY stores very cheaply.
Springtails & tropical woodlice will help control mould and waste.
You can give the scorpions a hand with somewhere to burrow by using an upturned coconut half or the like. I cut up the exo terra background to make a cave spanning the length of the tank and a 1/4 of the width, then filled it with coconut fibre and hollowed the entrance out.
Your emp will rearrange the tank to its liking so don't worry too much about little details.

I get my springtails and woodlice from ChrisM on bugnation.co.uk for a tub of both he usually charges £3 + £2.50 postage. I think they're a tad too small for scorpions to bother trying to eat.

Not sure about other starter scorpions to be honest. Scorpions will eat anything they can catch really. I feed mine crickets, locusts and the odd wax worm.
