He spends all his time in his hide. Is it safe for me to try him with food again on a weekly basis or will I be stressing him out if he is getting ready to moult?

A fat spiderling do well without food for over a month. You can try to feed It with pre killed food, leave the food in the container for a night and remove next day if hadn't been eaten. Don't forget to provide water for your sling!!!
Everything will be all right!
