It's part of their mating ritual, they fan each others faces with their front feet, sometimes give little nips to the neck, but in sexually immature turts they're just practicing.
They don't really know what sex they are themselves, and often females will display to other females, and males to males, and females to males, and sometimes males do it towards other males as a display of dominance.

So how do I know what sex the other one is? Also what age do they mature sexually?

That's the tricky bit! They become sexually mature at around 3-4 years and by then it should be obvious if the other is female, especially if you have one of each so you can compare them.

BTW he's not hissing at you, he's exhaling as he withdraws into his shell and it makes that sound. Unlike most animals turts can't expand their ribcage (their shell is actually a fused ribcage), so when they withdraw suddenly into their shells they have to empty their lungs to make room for head and legs!
