One of the most visible signs of stress is a drop in appetite followed by a drop in activity levels, hiding, being particularly still. The colouring as you mentioned and the darkening or dulling of it (dont mistake it for shedding though). Not using the basking area for hours at a time. Clawing at the glass frantically to get out. Glass surfing or rubbing the snout along it excessively....sure others will have more.

Principle way is by stress marks on the belly! the belly should be nice and white. if it looks like there are lots of black/dark lines on their belly (which can extend onto the neck legs and tail (though not always)) then your beardie may be stressed. dark colouring is also a sign of being slightly stressed. if your beardies is bright, eating and basking well then chances are he is not stressed!
hope this helps!
